Jon's Peppermint Bark

1. 1 pound - good white chocolate chips
2. 24 peppermints
3. 1 tablespoon butter
4. 1 tablespoon peppermint flavoring

-Place the peppermint in a heavy-duty plastic bag and crush (I use a hammer - there will be some larger pieces, but try to crush the majority to a fine consistency)

-Melt chocolate chips either in a double boiler or in the microwave (one minute on high - make sure not to heat them too long, they burn or become rock candy)

-When melted, immediate stir in butter and peppermint flavoring - stir until smooth

-Add crushed peppermint, stir and pour onto a cookie sheet covered with wax paper or parchment paper

-Press the larger peppermint pieces on top

-Chill for about an hour and then break into pieces

*****If you want your bark to have a dark chocolate bottom layer. Do the following:

-Melt 1 pound of dark chocolate chips (easier to melt and handle than white chocolate)

-Stir in one tablespoon of peppermint flavoring (not necessary to add peppermint pieces)

-When smooth, pour onto wax paper cover pan - shake until it is the desired thickness - let cool for about 10 to 15 minutes, then top with the white chocolate mixture and cool until hard.

-I crack mine with the back of a ladle

-If you want it to be a little bit creamy, add about 3 tablespoons of heavy whipping cream to the white chocolate mixture.
