Pancakes Topped With Stewed Apples
and Maple Syrup

You should use your favorite pancake mix.

The real taste is in the apples and maple syrup.

-Peel and core about two apples per person. I peel them and use an apple corer. It makes perfect size bites

The following directions are for two servings:

-In a sauce pan, combine

1/2 stick of butter
1/2 cup of dark brown sugar
1 tablespoon cinnamon and a dash of nutmeg or ground clove
1 teaspoon of vanilla extract

-Melt this mixture over medium heat until butter melts and the mixture combines -

-Add apples

-Stir occasionally until apples are coated with mixture and tender.

-Pour ample syrup (in the amount you think is necessary) into another sauce pan; add a couple of tablespoons of butter and heat

-Stack prepared pancakes in a plate, adding a little syrup mixture as well as juice of the apple mixture to each pancake;

-Top with stewed apples, pour more syrup mixture - Sprinkle with cinnamon and sugar - Sift powdered sugar over the whole stack, add a dollop of whipping cream if desired and serve at once. Your guests will love them!
